This scrumptious mashed potato substitute is super easy, tasty and gluten-free.

Paleo Garlic Mashed No-Tatoes

Ingredients

  • 2 large cauliflower heads chopped
  • 1/4 cup grass-fed butter or regular butter
  • 1 teaspoon salt to taste
  • 1 teaspoon ground black pepper to taste
  • 1 tablespoon fresh chives chopped
  • 2 cloves garlic minced

Instructions

  1. Wash chopped cauliflower florets and steam until tender.
  2. Place cauliflower, butter, salt, pepper, chives and garlic in a food processor.
  3. Pulse until mostly smooth and consistent. Scrape the sides as needed.
